POSITIONS


Incident Manager
The individual responsible for all personnel at the incident, interacting with the U.S. Forestry Department Food Unit Leader and all other government personnel. This individual is prepared at all times to depart from the dispatch point one hour from the first notification of an incident. They are first to arrive on scene, along with the First Response Crew, and oversee set-up of the camp. This person is capable of performing all jobs, if necessary. In addition, this person is responsible for general oversight of the Kitchen Manager, Cooks, and Utility Labor crew as well delegating tasks to the First Response Crew. **

Kitchen Manager

This person is present to assist the Incident Manager in all aspects of food preparation and service. He/she is responsible for menu development, ordering of supplies, overseeing all daily meals, including hot and cold canning, as well as supervising on-site sack lunch production. This individual must be a team player and be able to actively facilitate team building. In addition this person must be self-motivated, conscientious and have a customer-centered attitude. **

Supervisory Cooks

Person or persons responsible for a particular meal period. These individuals consult with the Kitchen Manager regarding the menus for his/her meal period, serving time, meal count and special diets. He/she also insures that food is held and stored properly, as well as labeled and dated in accordance with government specifications.**

Breakfast Supervisory Cook
Responsible for all phases of breakfast, including the 24 hour bar, and supervising Cooks associated with this meal. **

Lunch Supervisory Cook
Responsible for all phases of lunch kit preparation and delivery, as well as supervising Cooks associated with this preparation and delivery. This person ensures the correct number of meals are prepared in a timely manner.

Dinner Supervisory Cook

Responsible for all phases of dinner preparation, including the salad bar, drink trailer, and all associated Cooks involved with this meal.

Cook
An individual who takes direction from the Supervisory Cook as a food production team member in order to prepare breakfast, lunch and dinner entrees, accompanying sides and desserts. Ability to safely operate appliances including, but not limited to, stoves, grill-tops, steamers, deep fryers, mixers and slicers is a must.**

Maintenance Manager
This individual is responsible for installation, maintainence and repair of machinery, equipment and ancillary structures prior to departure at the commissary in El Segundo and upon arrival to incidents. A commercial drivers license is mandatory along with at least one year of general mechanical, electrical and refrigeration equipment maintenance experience. Job duties include, but are not limited to, driving equipment tractors or trucks, monitoring all water tanks, periodically inspecting plumbing, lighting and refrigeration. **

Utility Labor/New Hire

These individuals will perform a variety of job duties including, but not limited to, serving food from mobile kitchens, dishwashing, cleaning and sanitizing eating areas and handwash stations, maintaining supplies at handwash stations, daily clean-up of mobile kitchen units and properly maintaining assigned task logs. **

**First Response Crew:
All individuals, regardless of job assignment, should be prepared to depart from our designated dispatch point in El Segundo within two hours from first notification of an incident along with the Incident Manager, or make pre-arranged travel plans to meet directly at the incident. Upon reaching the site, team members are responsible for taking direction from the Incident Manager and carrying out all necessary duties to secure all equipment and electrical sources, erect tents, as well as set-up 24-hour service bar, salad bar, etc.


Common Questions & Answers


Question: When it comes to employment, what are the big differences between your three divisions?
Answer: Our Film Catering division operates year-around. These jobs often involve extended periods of travel and have a tentatively planned duration, lasting from a couple days to months at a time. Our Social Catering and Event Planning division also operates year-around, however travel is, for the most part, confined to the greater Los Angeles area with most jobs focused around the lifespan of an event, from its inception to finish. Lastly, Our Express Catering Division currently offers seasonal work, typically from the 1st of June through the middle of November. As a disaster response provider to the US Forestry Department, assignments are unpredictable in nature and can typically last anywhere from about 5 days to 45 days, with anticipated travel to a variety of destinations.

Question: How long will my employment last?
Answer: Your employment is dependent upon the length and frequency of the assignments we are dispatched to.

Question: How will I travel to and from the intended destination?
Answer: Depending on your proximity to either our commissary or the end destination, a travel plan will be predetermined. Typically, those residing close to our meeting point carpool in the caravan leaving from our commissary in El Segundo and return home in the same manner. If need be, alternative arrangements may be made at our expense, however return costs due to early dismissal or departure from a site is the individual’s responsibility.

Question: What will be expected of me once on site?
Answer: Upon meeting and discussing your job qualifications, you will be given a specific job assignment. All team members are responsible for the set-up and tear-down of a camp. Depending on your assignment, lifting and hauling equipment and products weighing up to 50 pounds may be required. Once on site, you will be expected to carry out your specific job assignment under the direction of the general manager and/or kitchen manager. Additional responsibilities may be added as needs arise and as the team member agrees to.

Question: Am I permitted to leave the job site during a job?
Answer: Because we are a wildfire and natural disaster response team, it is required that all employees remain available on-site, 24 hours a day. However, during jobs of an extended duration, time away is arranged on a regular basis.

Question: Where will I stay once at the site?
Answer: For Stars Express Catering provides a mobile bunkhouse facility for employees. In some instances, individuals may need to, or prefer to stay in a tent.
